Vegetable Tagine with Harisa
Ingredients
  • 2 onions, sliced
  • xbdtsp ginger-garlicpaste
  • 1tsp sugar
  • 3tsp Harisa seasoning
  • a pinch saffronof (optional)
  • 1tsp cumin seeds(roasted and crushed)
  • 1 cinnamonstick
  • 1 bay leaf
  • 250ml vegetable stock wateror
  • 3 tomatoesripe , skinned and chopped
  • 2 carrotslarge , cut into chunks
  • 2 sweet potatoes, peeled and cubed
  • 1 red pepper, seeded and cubed
  • 1 pepperyellow , seeded and cubed
  • 2 brinjals, cubed
  • 400g chickpeassoaked overnight and cooked
  • 1tsp red chilli pepperdry powder or (optional)
  • Salt
  • 2tsp Oil
  • parsleyChopped fresh for garnish
Instructions
  1. Heat the oil and fry the onion, ginger-garlic andsugar over a low heat until onions begin tocaramelise.
  2. Add harissa powder and spices and cook until fragrant.
  3. Add the veggies, season with salt, Cover and simmer for 40 minutes or until the vegetables are tender.
  4. Garnish with chopped fresh parsley.
  5. Serve hot with couscous or rice.
