Garam Masala spiced Palak Paneer Timbale

A Timbale is a baked savory custard like dish usually made with meat, cheese, vegetables and eggs. Pasta or rice is sometimes added to the creamy mixture too. This elegant dish can be made almost with any vegetable. There is a Light up your Diwali contest going on at The Urban spice. We have to create recipes with Spinach ,Egg , Brown Rice, Khoya or Oats as the core ingredient. I thought of a Spinach Timable which has been on my mind for a while. Currently I am in a ‘fusion food’ creative mode and so the Spinach Timbale turned…

Desi Health Bites – Mini Thalipeeth Tostadas

I love experimenting with different grains and flours. Jowar, Nagli/Ragi,Amaranth, Corn etc.. are pantry staples in my house. Most of the times,I use a blend of these grains for our day-to-day food in the form of khichdis, upmas, dosas. One such multipurpose, wholesome flour mix is the ‘Thalipeeth Bhajani. The soaring temperatures and longer days are not for me; but I look forward to the grapes and mangoes that this season offers! Summer is also the season to enjoy some delicious fruity salads! This salad was accidentally discovered when I wanted to put together some leftover fruits. The Green color of the apples (Granny Smith Apples) is very soothing in this heat. All similar coloured fruits and veggies are thrown together in this Salad with a dash of Mint, salt…

Panaki

Panaki or Panagi is a traditional recipe originating from the Konkan region of Maharashtra. Usually it is made with a sweet stuffing of jaggery and coconut. This is my mom’s non-sweet version of the recipe. This savory Panaki is a Rice pancake steamed between turmeric leaves stuffed with some vegetables. (traditionally the sweet version is stuffed with coconut-jaggery)The dominant flavour in this recipe is that of the turmeric leaves. If you can’t find turmeric leaves or if you don’t like its strong flavour you can use banana leaves. This is entirely my mom’s recipe; in fact these photos are taken…

About Me

About

My experiments with cooking go way back, when I stayed in a hostel for my higher studies. The ‘Mess’ (literally) food was good just to satisfy the stomach, not the palate. I really missed my mom’s food then. I still do. A self confessed foodie, I love trying out new recipes. ...
