Friday Monsoon Magic-Paneer Pudina Pakoda (Cottage Cheese- Mint fritters)

I have been resisting the temptation to make these Pakodas for a long time now. Monsoon brings with it cravings for hot,spicy,fried food. I am not a great fan of fried foods, but during the rainy season it is difficult for me too,to resist the temptation of these delicious minty Paneer Pudina Pakodas- PPP J (Cottage cheese-Mint fritters). This Friday for the Monsoon Magic seriesI have a recipe for spicy Paneer Pudina Pakoda. This is one of the recipes I would list under my ‘Culinary Accidents’. This accident sure was rewarding. Incessant rains and frequent power cuts have kept me off blogging for the past week. Getting to work and back seemed like a big ordeal when rain Gods decided to visit us for 3-4 days continuously. I love sandwiches for breakfast -They are very quick to make, you can sandwich almost anything between two slices of bread (sometimes even leftover curries), and very easy to carry. Pudina Tofu stir fry (Minty Tofu stir fry)

I happened to ‘accidentally’ discover this recipe. I happened to dip a piece of Tofu in green chutney (made for Bhel / Sev Puri) and it tasted quite good! And thus was born ‘Pudina Tofu stir fry’ :). Now it has become a common recipe in our house since it is quite easy to make. Proteinaceous tofu is marinated with herby Pudina-coriander chutney to make this nutritious, healthy, flavourful and tasty recipe.
